Great things really do come in tiny packages, or quantities in general.
Ever since I got addicted to salads, this vinaigrette has been a lifesaver.
I’ve always been scared-skeptical of Balsamic Vinegar in general, but ever since I took that risk (the way Julia Child taught me how) and went ahead with this dressing – and consequently had my mind blown. The flavour profile for this vinaigrette is everything the world has ever claimed it to be. And so much more.
Things you’ll be needing for this dressing are Mustard, Balsamic Vinegar, Extra Virgin Olive Oil (aka. EVOO), and salt & pepper.
The secret for every brilliant dressing lies in the ratio. In this case, it is a simple 1:1:3 ratio (Mustard : Vinegar : EVOO).
In case of any other dressing, it is a simple 1:3 ratio where the 1 is the acid/lemon juice/vinegar and 3 is the Extra Virgin Olive Oil. This ratio works like magic every time. Learn more about perfecting this basic skill with the help of the brilliant Jamie Oliver HERE.
So starting off with 1 teaspoon of Mustard.
Adding 1 tablespoon of Balsamic Vinegar.
And 3 teaspoons of Extra Virgin Olive Oil.
Throw in a pinch of salt & pepper.
Whisk it all up!
The Mustard actually acts like the emulsifier, making the entire whisking process easier and cutting down the time by a third of what it would be without it.
If you think Mustard isn’t really your thing, feel free to omit it. Everything else remains as is, and just the whisking time increases by a bit.
Once it is all combined, just pour it over the salad of choice.

- 1 tsp Grain Mustard
- 1 tsp Balsamic Vinegar
- 3 tsp Extra Virgin Olive Oil
- Salt & Pepper to Taste
- Add everything into a bowl.
- Whisk all till combined.
- Pour over salad of choice & enjoy!
