Colourful foods win everything.
They win the best looking dish award, the most stares and wants on the dining table and they win life in general.
The fact that these colourful foods happen to be the most healthy things to ingest is just a happy coincidence.
With every passing day and addition of grey hair, I get more and more convinced that smart eating is the way forward.
This Green Salad with Grapes, Cherry Tomatoes, Onions in a Mustard – Balsamic Vinaigrette is one of those smart, healthy colourful eats which you should be having in your kitty. Its a super quick fix – especially for weeknights, its delicious, healthy, filling while being light. If you know what you mean.
For this glorious salad, you’d need –
Roughly tear up the lettuce leaves (any kind of greens would do) and throw them in a bowl.
Add in the sliced cherry tomatoes. Regular sized tomato chunks would do too.
Delicately, sprinkle on the half-moon onion rings.
Finally, drop in the olive & grape halves.
Whisk up your dressing. Find the step by step recipe for the Mustard Balsamic Vinaigrette dressing HERE.
Pour on the dressing on the salad.
Lightly mix everything together – use fingers for the most effective results. Best!
Serve this colour mayhem out on a bowl.
Bask in the glory of smart, healthy and delicious food choices.
